Inspired by the version I did recently for toaster oven baked thighs that tasted like Tandor chicken.
Rub in KFC seasoning all around, place in large zip bag with enough yogurt to cover liberally, marinate a few hours but preferably overnight.
Cook directly on the oiled top rack, with a salt covered drip tray below on the bottom rack, to catch the drips with no smoke. Skin side down, 250F for 1 hour. (240 for my convection)
Turn, season the skin side again, light spray of cooking spray, another 20-60 minutes until internal temp of 175F. Remove and cool on a rack with tented foil. Looking for 185-190F with carryover cooking after about 10 minutes.
If it's not crispy golden skin enough for your taste, broil 2-5 minutes until it is.
Sounds crazy high but the bone in thighs can take it, this really breaks down the collagen, the yogurt makes the meat tender, moist and perfect.
To approximate Tandor style chicken, instead of broiling at the end, put it on a smoky hot grill for 2 minutes until the edges get charred.
