Why? Because I like Apple Jacks for a snack. Why Jacked Jacks? I like candy, and every damn thing is too expensive, so this will be Apple Jacks candy pretty much.
Works ok with oat rings but the hole tends to get clogged with frosting.
8 cups Apple Rings cereal
In a big pan or Pyrex bowl, melt 1 stick of butter.
Add
Zest of 4 limes, then the juice
1 tsp vanilla extract
1 tsp vanilla cupcake flavor
1 tbsp Fuji Apple flavor
8 drops cinnamon oil
1 tsp biscuit flavor
1 tsp sweet cream flavor
I know nobody is going to keep these flavors on hand. I'm weird and have tons. You don't need any of them really, but I would make the difference with just vanilla and cinnamon oil to substitute. The main background flavor of Jacks and Loops is lemon, hence the lime juice, and it just makes a good glaze with the sugar.
1 tbsp Ceylon cinnamon powder
Half a bag (2-4 cups) powdered sugar
Stir and taste balance. Fold in 8 cups of Apple rings cereal, cover well. Add more cereal if there's too much frosting. Microwave 3 minutes on high, then transfer to a 220F oven. Vent the oven with a chopstick propping the door open for the first hour. Stir gently every 20 minutes or so. I do this for about 3 hours to make sure all the moisture is out. If not, it'll get stale-soggy. Spread out to cool on parchment.
When cool or cooling, break apart any clusters into individual cereals. Dust lightly with powdered sugar to help prevent re-sticking.
When I have chocolate in my freezer, I like to melt it in a double boiler and drizzle all over after it's done and cooled. White chocolate, too. Anything sweet and melty. Maple syrup or sorgum?
