1 lb. chicken tenders (works for fish, too)
(I used some cheap wing segments I had in the freezer)
In a mixing bowl, add these dry ingredients and mix well:
- ¾ cup Flour
- 2 tablespoon Cornstarch
- ¼ teaspoon Baking Soda
- ¼ teaspoon Baking Powder
- 1 teaspoon Salt
- 1 teaspoon Sugar
- ¼ teaspoon Onion Powder
- ¼ teaspoon Garlic Powder
- ¾ cup Water
That's the original from the link. I made it a TABLESPOON of salt, added 1 tsp MSG and 1 tablespoon of fish sauce, for that "just fried in the same oil as the fish" funk that chicken planks had.
Mix batter well, dunk chicken and shake off excess, deep fry for six minutes at 375F, turning halfway. Drain on wire rack and enjoy!
It's DEAD on!
Did it with fish a week later. Recommendation: Swai.
