Chick-Fil-A Nuggets copycat

Looks odd because thigh meat.

Difficulty: amazingly easy

I planned on spending all day doing test batches and dialing in the right ingredients and such, but I declared victory on the first test of 2 nuggets.

If you google for this recipe, you'll find many similar, and everybody seems to be in search of the SECRET. The secret isn't pickle juice or voodoo magic. It's sugar and ultrafine flour. Sorry to disappoint :)

  • Chicken breast, cut into 1" cubes
  • About 2 cups peanut oil for frying
For each pound of chicken, you'll need
  • Egg wash: 1 egg whisked + 1 cup water
  • Breading mixture:
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. paprika
  • 1 TABLESPOON of powdered sugar
  • 1 cup Wondra brand ultrafine flour

Put the oil in a roasting pan in the oven at 375F for 10 minutes or so, until it comes up to temperature.
While it heats, dip the chicken cubes in the egg wash, then flour, shake off excess, put on plate and back into the refrigerator until oil is ready.

In small batches, not touching, add chicken chunks to the oil, cook for 8 minutes or so. Carefully remove from oil (Do NOT have an oven accident with boiling oil. Not good) and let drain on paper towwl. Repeat till done.

That's it! The "magic" is just the slight sweetness in combination with the fine flour. I added KFC copycat seasoning to my final batches, I think the seasoning is whatever you like, but then it's only slightly less Chick-Fil-A ish.

These are FANASTIC cold out of the fridge, or in Cashew Chicken. Yeaaaaah!
