Chicken and Spaghetti di Tonti
I LOVE spaghetti and fried chicken on the side. I don't understand why it's not a thing at restaurants, so I make my own.
Lots of links here:
6 boneless chicken thighs marinated in The Best Chicken Marinade Ever, which is so popular it's cross posted so many times I don't even know who created it originally.
2 tablespoons copycat KFC seasoning in 1 cup panko, 1/2 cup breadcrumbs and 1 cup flour
I used the oven fried chicken recipe, which is foolproof and less messy.
Use the F-E-B method: Roll in FLOUR, dip in EGG, roll in BREADING.
1/3 cup oil into a small baking dish
Add the pieces so they don't overlap, and bake at 375F for 45 minutes, turning once.
I started the basic tomato sauce recipe last night using a pound of crispy fried bulk sausage.
Whee, incorporated 3 old recipes for this one :)
Lastly I cooked a local brand of handmade air-dried angel hair pasta according to directions.
1, 2, 3 presto! Chicken and Spaghetti, so so good. Bagged up 12 small portions: 1 cup sauce, 1 cup pasta, 1 half-hunk chicken.
