Pork Neck Potato Cabbage Soup



My favorite poor people food. I learned this by being poor and eating rich :)
You can whip this up if you can scrape up about 7 dollars and it makes about 12 hearty servings.

Roast 1-2 pounds meaty pork neck in the oven for about an hour, let cool, pick apart.

Cook 1 smoked sausage, halved and quartered in small bites. Get it nice and brown and rendered.

I had half a pound of locally cured city ham lunchmeat. Diced that up and fried till crispy.

Dump the meats and save the grease.
Cook 2 diced carrots, 4 celery, 1 big onion diced
Cook half a cabbage sliced into ribbons

Drain and rinse 1 can cannellini and 1 can navy beans

Boil 2-3 pounds red potatoes, peeled and diced

Dump it all together, add 32 oz. Clamato, 24 ounce whole San Marzanos, pinched apart, and a couple squirts of tomato paste or about half a can. Add 32 oz. chicken stock and a couple tablespoons of chicken bouillon paste.

Season with salt, pepper, celery salt, garlic salt, italian seasoning, fish sauce, anchovy paste, hot sauce.

Taste the broth and if it needs more bullion do that, if it needs more meaty flavor add bacon bits.

Add one package of frozen cooked and drained spinach.

Simmer and serve. There was only a few tablespoons of pork neck meat but boy it sure runs the party.
