Sunday is pizza day. Just had dental work done, can't chew much. Solution, PIZZA RICE! And instead of regular pizza rice, let's Alfredo it. And I might regret this, but let's toss in a bunch of scampi. This could be an abomination and implode, or it might work. Here goes my working theory...
Start the rice:
2 cups rinsed basmati
Liquid for rice to make 2 cups plus:
1 can consomme plus water
Dice up (any toppings) a few slices of ham, one onion (Set 1/4 of the onion aside and slice lengthwise), 1/4-1/2 cup diced mushrooms, pickled jalapenos to taste.
2 tablespoons butter
Then add 1/2 cup of Alfredo sauce.
I used 1/2 cup of cream, 1/4 cup grated Romano, 1/4 cup Alfredo (Parmesan and Garlic) powder, 2 tablespoons butter. Had a little left over.
Cook 1 pound of shrimp scampi-style, in butter/salt/garlic and set aside to cool. Keep it undercooked, just pink. It will finish out in the hot rice.
When rice is done, stir in the shrimp and the 1/4 raw onion. Stir in 1/2 cup grated mozzarella while it's steamy and add pizza sauce to taste.
This is pretty gnarly but super delicious. It came out a bit gloppy so we need to use less liquid next time, and it needs more pizza sauce somehow. End result is a bit like Mexican Shrimp Rice Deluxe. Surprisingly all ingredients play together well. Worked well enough to get me through Pizza Sunday.
