Coconut Lime Rice



Soak and rinse rice, 2 cups dry
Saute in 1 TB butter and 1 TB coconut oil, along with 1/4 cup shaved coconut, don't burn the coconut
Add liquids:
1 3/4 cups consomme or broth
1 3/4 cups coconut milk
juice of 1-2 limes

This was a perfect foille for spicy grilled chicken, slightly sweet and super bright.
