Tried several of the top KFC copycat recipes, and this is what I like.
- 2/3 tablespoon salt
- 1/2 tablespoon dried thyme leaves
- 1/2 tablespoon dried basil leaves
- 1/3 tablespoon dried oregano leaves
- (or for the lazy, 2 tablespoons Italian herb seasoning)
- 1 tablespoon celery salt
- 1 tablespoon ground black pepper
- 1 tablespoon dried mustard
- 2 tablespoons paprika
- 1 tablespoon smoked paprika
- 2 tablespoon brown sugar
- 3 tablespoons garlic powder
- 1 tablespoon ground ginger
- 3 tablespoons ground white pepper
- 1 tbsp Accent Seasoning (MSG)
A TABLESPOON of mustard? THREE of paprika? Yep, no typos here.
It REALLY tastes like KFC original seasoning. Close or not, this is all I use anymore
for rubs and chicken seasoning, fish, salty snacks, canapes, steak, dips. spaghetti sauce..
It has a pepper-forward flavor at first from the white pepper, then drifts into savory and herbal flavors.
Edit 11/2020: I still use this ALL THE TIME for stuff, I have to keep making batches. It's just good overall seasoning. KFC Seasoning and Zesty Italian are now my main seasoning salts in general cooking. KFC is the savory smokey one and Zesty is the light and zingy one.
For a KFC-like texture, I do shake and bake with 50/50 cornstarch and seasoning. No egg no nothing else. I use about 1 tablespoons per cup of flour for regular flour/egg/breadcrumbs method.

Works amazingly as a rub, really flavor forward if you let it soak in for a few hours or overnight, but I've applied this to wings right before frying, with a full flavor.
