The RUNZA of Nebraska

Mini muffins using crescent dough

Flaky biscuit dough is easier to work with. I get 4 Runzas per biscuit, splitting at the edges.

First, go google it. I'll wait. 

Ok, now you know. That's how I found Runzas, completely randomly.

Also I have no idea if this is anywhere near authentic, but it IS burger and cabbage and cheese inside bread.

  • Cabbage 1/2 head, sliced thinly and fried down in 2 tbsp butter until soft
  • Burger, 1 lb. browned (I seasoned with 1 tbsp beef bullion paste, a few hits of soy sauce, Lawry's seasoning salt, celery seed, 1 tbsp ketchup and a couple dashes of malt vinegar)
  • 1 onion diced and cooked with 4-5 cloves diced garlic
  • sliced cheese
  • 2 rolls of crescent or flaky biscuit refrigerated dough

That's the mix! I used a recipe that used crescent roll dough, I found that tricky to work with. I awkwardly put 1 tbsp filling with a tiny slice of cheese and tried to work them closed. I used a mini muffin tin to hold them and baked 325F for 15-18 minutes.

I did egg wash the tops and sprinkle Everything Bagel on them, because that's how I roll.

I have a good pound of leftover mix, so I'll try using flaky biscuit dough next week.

I often write these recipes before even tasting the finished product. Did that here. WELL.

HOLY CRAP THESE ARE DELICIOUS! I was actually shocked. Wow. Wow wowow wow. Hats off to Nebraska. You guys know how to eat. :) Just finished the first one. Which implies a second one. Maybe a third one. I don't understand why this is so much better than I expected. I guess because of the simplicity. There's our lesson for all cooking.

EDIT: Updated using flaky biscuit dough. Just as good and eaiser to work with.
