The secret ingredient to this recipe is a fairly new product called TrueLemon. It's tiny packets like a sugar packet, but it contains the equivalent of 1 tablespoon lemon juice, but it's a dry powder. Great in your water! Even greater with cooking.
For 4 whitefish filets:
Marinate in a 50/50 mix of brown sugar and soy sauce for 15 minutes or so. It should by slightly syrupey.
Make egg wash with 2 eggs, thin with one cup water
1.5 cups Wondra extrafine flour. Season with 1 tablespoon Old Bay
1.5 cups Panko and regular breadcrumbs mixed, also seasoned with 1 tablespoon Old Bay.
Dredge fish in Wondra, gently coat with egg wash, then roll in the breadcrumbs. Place on oven rack directly. Repeat for the rest. Sprinkle 1 packet of TrueLemon on each fish.
Spray the fish top and bottom with olive oil, and bake at 450F for 10 minutes. Garnish with fresh lemon. LEMONEY! There, I blew your mind and your taste buds. You're welcome!
