Creamy Lemony Pasta (dairy free)


Was looking for something comparably satisfying as mac and cheese for side dishes. This one works out pretty well!

1 onion diced
2-3 cloves diced garlic (I used ginger garlic paste)
2 1/2 cups chicken stock, seasoned
1 cup coconut milk (full fat)
1 cup cashew milk (much tastier)
1 lime, zest and juice
9 oz. pasta (I used tiny shells)
I threw in a big can of mushrooms and some bacon bits
Salt, pepper, red pepper flakes

Get boil pot going with liquids
Cook the onion and garlic and add
Taste and adjust seasoning
NOTE: Don't adjust to full flavor, remember this is ALL going to boil down and get absorbed. Go about half flavor. The lime intensifies as well.

When rolling boil, add pasta.
Cook 18 minutes or so

Yes, 18 minutes or so. With this liquid it's slower to soak in. Might take longer, just let it go longer then. I did this in my rice cooker, so after about 10 minutes in Nuclear Furnace mode, I shut it down to Keep Warm.  When it wasn't all absorbed by 18 minutes, cranked it back up to White Rice till it was giving off more steam, then back to warm until it was ready.

Surprisingly creamy and rich and satisfying! Super good pucker factor. This will make a nice side starch and comes close to mac-cheese satisfaction.
