Low Country Shrimp and Sausage Pasta
Sometimes you throw stuff together and it ends up being a keeper. This was something I pondered during the week, got all fancy, then backed off and kept it simple. It's basically a Low Country Boil flavor only with pasta.
1 pound medium shells, cooked in chicken bullion, strong.
1 pound smoked sausage, quartered and diced small
1 pound cooked spinach
2 tablespoons butter
2 tablespoons garlic
1 pound thawed shelled shrimp
lots of Old Bay seasoning
That's really it! Cook the sausage way down till it's shrunk, drain the grease, add the butter then the garlic then the shrimp then the spinach. Toss it all together and zap it with squeezes of lime juice.
YUMMM! It's garlicky butterey spicy sausagey shrimpy limey. Win. Also this was a 15 minuter, good for hot weather and short cooking time.
