Hold on now, this should be good. I've been adding sausage to tuna noodle casserole for years, and it's great. Get over it, and taste!
Ok? Ok. Now we're just going to Lasagna it.
This recipe is another theoretical one that got away from me. It's still cooking now, so we'll see, but it tasted great up to the baking stage.
1 lb. bulk sausage cooked crispy
1 lb. smoked sausage cooked crispy
4 stalks celery, diced and softened
1 onion and 3 cloves garlic, softened
1 can whole tomatoes, broken up
1 can tomato paste, thinned slightly
4 oz. canned mushroom
8 oz. Albacore tuna
1.5 cups frozen thawed peas
All that gets dumped into a big mixing bowl.
Then we do the cheese sauce:
1 stick of butter
1/2 cup Wondra flour
8 oz. american cheese slices
1.5 cups milk
1 tablespoon chicken bullion paste
Melt the butter, thicken with flour, brown, slowly add cheese and milk. I also thickened with Alfredo powder to get it to the right consistency, a couple tablespoons. Add this to the big mix as well and taste, season as needed. It won't need a lot due to the sausages. YUM! It's tuna-ey smokey savory and super good. It is a weird orange color. Note to self, use white American cheese next time.
Prep the ricotta:
Mix 2 eggs, 8 oz. Ricotta, 1 tablespoon of parsley, 1 tablespoon Italian Herbs well, and set aside.
Slice up 1 lb of Mozzarella and set aside. I used a pregrated Mozz/Parm mix just because it was cheaper than bulk cheese, oddly.
Cook a box of lasagna noodles al dente, and now we build the thing: Spray the pan with nonstick spray. Layer of mix, layer of pasta, layer of ricotta, layer of mozz, repeat till done, ending with a layer of mix.
Bake 350F 40 minutes or so, top with remaining Mozzarella Parmesan mix and broil a couple minutes till melted. Let cool 10 minutes and serve.
This made a giant, full baking pan and I should get 10 or 15 lunches out of it easily.
It's starting to smell great and I'm starving!
WOOHOO this is awesome! It has both elements of tuna casserole and lasagna, and it ended up being FANTASTIC. A dubious marriage made in Hell that turned out well. Good job, crazy me.
