Smoked Mushroom Cheddar Biscuit Burgers

Cows in a blanket?

Well. This one turned out to be genius.

Mixed 1 lb ground chuck with 1 lb hot bulk sausage, and made into silver dollar burgers, grilled with hickory and topped with extra sharp cheddar. Make sure to make these small!


Sautee 1 pound sliced button mushrooms in butter until no more steam rises. Deglaze with wine and au jus, add 1 teaspoon beef bullion paste, garlic salt and pepper, reduce until thickened.


Then get two cans of flaky refrigerated biscuits. Split a biscuit in half, stretch each half as far as you can without breaking. Add a slice of cheese and a small spoonful of mushrooms, then a burger, then a stretched top half of dough. Gather around the bottom edges and pinch closed all around.

Bake at 375 for about 6 minutes until golden, then remove, turn and go another few minutes until done.


Dang tasty. Needs no condiments.
