Hamhock Fried Rice


Just wanted to show off this MASSIVE batch of fried rice, 4 cups uncooked.
I cooked a big bunch of hamhocks overnight in the slow cooker, cleaned that off and cooked the rice in the rich ham stock with turmeric and a bit of 5 spice.

Cubed and fried a pound of ham steak, threw in 2 onions, a head of diced garlic, steamed snow peas, peas and carrots, and 4 fried eggs cooked in duck fat. Lots of soy sauce, fish sauce, MSG, diced jalapeno, lime juice,

Fried in batches in a blazing hot cast iron pan, tossed and seasoned and finished with green onion. I'll be eating these lunches until summer.
