Sweet and Sour Sausage
1 cup of sliced carrot
1 cup of sliced celery
1 entire sliced fennel
2 onions
1 package snow peas
Soften these in batches and set aside
Half and slice 2 smoked sausages
Brown well to render fat and drain
1 bag of mixed cauliflower and broccoli, steamed
1 can pineapple chunks
1 small jar maraschino cherries
Drain the pineapple and cherry juice and bring to boil
Add 1 cup apricot preserves
1 cup vinegar
1 cup ketchup
3 tablespoons soy sauce
fish sauce to taste
1 small can Hatch green chiles
red pepper flakes and onion salt to taste
pinch of yellow curry and garam masala
Mix the above together and reduce until somewhat thick
Add 3 teaspoons cornstarch in water
Mix it all up and serve over rice. Garnish with green onion, lime juice, cilantro.
