Short Ribs in Tomato Sauce

Not a fancy recipe. Nobody needs fancy anything with short ribs, they do all the heavy lifting as long as you speak gently to them as they go low and slow. Gentle speaking might not do anything, but it feels like the right thing to do.


Marinate short ribs in lots of salt and pepper and Dale's and vinegar and soy sauce and Zesty Italian homemade dressing powder overnight with a chopped onion. Rinse, pat dry and brown in a searing hot pan, a minute or two per side. Low and slow in the oven on the rack uncovered with water tray beneath for 4 hours.

At the three hour mark, I snuck a little sample and began to get emotional. Perfect flavor. Dense, rich, almost tender, Summoning great patience, cranked the kitchen timer for one more hour.

Make regular tomato sauce overnight with half a bottle of wine on low in the crock pot, season, murder 2 pounds of mushrooms and add that.

Make saffron basmati rice with butter, salt and pepper and a chopped onion in consomme.

Nice big scoop of rice, one droolworthy fallapart tender short rib, one generous ladle of tomato sauce. These gonna be some showstopper microwave lunches.
