Shaved Pork Tenderloin and Au Gratin Potato Muffin Sandwich
Hello again from crazy town. No idea how I came up with this but it was my plan all week to make it.
Made 2 batches of box Au Gratin potatoes, jazzed up with bacon bits, diced ham, diced white onion, green chiles, smoked Gouda and Cavendar's seasoning. Garnished with green onion.
Cooked one of those pre-marinated pork tenderloins in the oven 30 minutes, uncovered, with a water drip tray below until it hit 140F. Tented with foil, rested 10 minutes, refrigerated 30 minutes, then an hour in the freezer to firm up.
Shaved the meat on the deli slicer, toasted a couple muffins, and layered the pork and the potatoes, and took a bite.
NAILED IT. Sounds crazy, totally works not a little but a lot, and it's fantastic and filling and would eat any day of the week.
Post-eating review:
When I add so much junk to the potatoes, especially the extra cheese, it's almost too rich as a side. When used as a GARNISH over relatively bland meat, it's a great companion.
I bagged up 10 small-serving lunchy bags to freeze, can eat on muffin or just heat and eat. Cost, certainly less than $1 each. When I play freezer roulette and grab a bag of something, this will be a nice something to see when it defrosts. :)
I'm still sitting here with a stupid grin and happy stomach, still surprised at how lovely this came out.
