Revised Jerky Marinade February 2018

1 bottle Dale's Liquid Seasoning
3/4 cup brown sugar
1 tablespoon garlic salt
2 tablespoons celery salt
1 tablespoon dried orange peel powder
2 packet dry onion soup mix, with onions sifted out
1/4 cup maple syrup
1 teaspoon Worcestershire
few dashes fish sauce to taste
1 teaspoon shrimp powder
2 tablespoon celery salt

I put this in a gallon Ziploc and microwave for 1 minute, then swish, to dissolve dry ingredients thoroughly.

It's pretty intense and flavorful. Beefy celery-ey sweet-savory. Tiny bites for this strength level. I make it strong so that you're forced to eat it slower and it lasts longer. The above gallon bag is enough for about 1 pound of 97% lean ground sirloin. The yield is two packed full quart ziploc bags, one for home and one for work lasts me a week, including sharesies.

Seasonings for drying process, in order of application:
  • coarse black pepper (first because it sticks to the fresh wet jerky)
  • ground toasted and powdered coriander seed (go to an Indian store, buy a dedicated cheap grinder, mortar and pestle and a bag of coriander seed, toast in cast iron until fragrant, grind then pulverize)
  • dill (dried) (yes, dill! I discovered dill and coriander are the big players in Montreal Steak Seasoning along with garlic and rock salt. Super interesting flavor on beef.) Use lightly.
  • onion salt (use this to tweak how salty)
  • onion powder (use this to help absorb marinade, has little flavor)
  • lime juice (after the jerky is mostly dry, I do about half with lime and half without. It's an unusual tang but very different on the jerky )
Reminder that this ain't normal jerky flavoring. It's like nothing you've ever tasted. Hopefully you'll have fun with these flavors.

Dale's plus onion soup powder is the backbone, with the sugar and lime zing up front. Then comes more complexity, the onion soup, the pepper and dill and corianderseed, then the celery salt, and it all changes as you chew.

1 tablespoon chopped rosemary leaves

Favoring topping now with

  • ground pepper
  • pink himalayan ground salt (just because of the rock salt texture, it's so much better)
  • dill
  • ground coriander powder
  • onion powder
  • drizzle with lime juice.
