I'm really digging these refrigerated prepared pastas in the grocery. Pretty cheap and go a long way for easy meals. Just a few ravioli in a strong broth makes a super lovely side.
My cheater broth consists of 4 cans of Campbell's beef consomme, and the powder of 2 packets of onion soup mix, with the dried onions sifted out. It's pretty strong, because this is not soup, it's more like a super thin sauce :) You just get a bit of broth in your spoon with the bite of ravioli, that's why it needs to be robust.
Stuff I threw in:
- 1-2 cans water to make it less strong
- 3 bay leaves
- 2 star anise
- dash of Kitchen Bouquet caramel coloring
- dried parsley
- few dashes fish sauce
I microwaved a pack of broc and cauliflower, and cut it up spoonsize, and
added to the broth after it cooled down, along with some chiffonade basil and mint. Bagged up the cooked, cooled ravioli in separate bags, so they don't get soggy in the freezing and reheating process.
Probably not everyone's first menu choice, I paired this with bulgolgi-style rib tips for work lunches. At first I get suspicious looks, but those generally turn to looks of envy.
I got about 5 servings out of this
Edit: 2 weeks later, I've eaten the last one at lunch. I'm most proud of this for how cheap and easy it is, and with the little side plate of riblets, my personal (for now) pinnacle of modest luxury for my microwave lunches.
