Not a recipe, just a concept for myself.
I like Ro-Tel dip (velveeta, tomatoes with chiles, browned sausage) sometimes, but I don't want to gunk up a crock pot and eat a whole thing of it by myself.
Thanks to the miracle of disposable plastic salad dressing cups with lids, I can make mini-cups and freeze, then warm in the microwave when I want a little nosh.
Edit: Totally not microwave safe. For daredevils only, pulse and stir every 3 seconds or so with a pretzel. It's explodey. Also leave the top off and watch it rise..
Yield from one standard batch was 25 cups.
