Loaded Mashed Potato Broccoli Cups


Fun and easy, good flavor and outstanding texture! TL,DR: Line mini-muffin tin cups with lunchmeat ham, fill with loaded mashtaters and a couple eggs for binder, bake.

Super handy for lunches and make extra to share. Also good for portion control. I guess. 'Cause I just went through about 5 without blinking. For lunches I'll throw one or two in with an entree.

Look up any mashed potato recipe, and instant mash is fine, but here's what I did:

3 lbs. of small red potatoes, scrubbed and lazily peeled, quartered
Boil for 15 minutes in salted water
Drain and let cool
Lightly cook 1 lb frozen broccoli florets and let cool (good microwave, glass bowl, 2 minutes)
Chop broccoli and add to potatoes
Add 2 beaten eggs
Mash 'em together with your chosen implement of destruction

Add goodies: butter, cheese, sour cream or milk, green onion, bacon bits (go easy because smoked ham muffin liner) , jalapeno, adobo, cilantro, duck or whale fat, crab meat, Spam, chili, dried penguin meat (only if legal in your area), Chipotle burrito, pocket squares, Belgian waffles, hallucinogenic mushrooms, brazil nuts, poached hummingbird egg, squid ink, nonpareils, etc. Salt and pepper unless you think that's pushing things too far.

I went with lots of butter and milk, green onion, bacon bits, cheddar and parmesan, Cavendar's seasoning and garlic salt and pepper.

Spray minimuffin tins with nonstick cooking spray
Cut lunchmeat ham into 2-3 inch-ish bits and line muffin cups
Spoon potato mixture into cups
Bake for 30-35 minutes*
Enjoy!

Also stop enjoying at some point, because eating all of them is probably not a good idea.

This is a bit of a PITA for me, I do have two muffin pans but geez louise it took most of the day to cook all of them up, about six batches. My trick for rebatching is: Hot tray, put plate on top, flip and tap out, and don't touch till they cool down.

Easy peasy if you are not in a hurry, and it doesn't take long to load up a new batch. Worth it for cute factor.

*using two trays in big toaster oven, the bottom tray gets really hot. I rotated trays about every 10 minutes, monitoring closely.

Evening followup: Woah, these things are fantastic cold from the fridge. This is going to be a problem.
