Microwaved Artichokes

Proof of concept: The remains of an artichoke that was fresh 20 minutes ago. The cup contained compound garlic butter with lime juice and parsley and salt.


I've made artichokes baked, boiled, broiled, grilled, steamed, you name it. If a microwave is good for anything besides reheating food, it's corn on the cob and artichokes. Stupid easy and the best preparation, because it stays moist.

You can do elaborate preparation, trimming the leaves, trimming the stalk, removing the choke, etc. You can do all that, or you can just wrap it in plastic, right from the grocery store, and put it in the microwave for 6-10 minutes depending on your microwave's power.

Let it cool and steam for about 10 minutes, unwrap and enjoy. Eat the good parts (thin leaves and heart) and avoid the ungood parts (thick leaves and the choke). I like straight up garlic butter, salt and lime juice.

I rarely make this for mealtimes, it's usually a Saturday morning or Sunday afternoon standalone special snack. I have another already wrapped with a cup of compound butter for a lovely light lunch this week.
