Quinoa-A-Roni


Mmm this is glorious! The taste is wonderful, nutty and a fun, more delicious and healthier upgrade from rice, at least until I throw in the butter and bacon. I'm a bit overwhelmed with the deliciousness of this dish.

I used 1/2 cup (dry) quinoa, rinsed and soaked for 15 minutes. 2 tablespoons butter, and about 3/4 cup broken vermicelli. It takes longer to brown it all, about 15 minutes. Then threw in 3 finely diced garlic cloves and cooked till they were tender, along with 1 strip of chopped bacon. Added 1 can of consomme to a 2 cup measure, and filled it the rest of the way with water. Added 2 bouillon cubes, 1 tablespoon parsley and 1 tablespoon dried minced onion, simmered for 20 minutes.
