Ocean perch filets breaded in Panko, flour and cornstarch, with salt, pepper, onion powder, garlic powder, lime zest, and blackening seasoning to taste. Sprayed top and bottom with nonstick cooking spray, directly placed on top oven rack, with a drip tray below. Baked about 30 minutes at 425F.
Half a pound of white mushrooms tossed in salt and pepper and olive oil, BBQ grill-fried about 20 minutes on low. And yes, I like them this way, I like mushrooms reduced down for a richer flavor. Everything was super tasty!
