This uses some strong Indian inspired flavors, tempered with the cooling yogurt and sweet mild onions and tomatoes.
1 lb grass-fed sushi grade Kobe beef er I mean cheap stew meat cut into 1" chunks
3 tablespoons plain yogurt
8 cloves finely diced garlic
1 tablespoon finely diced ginger
1 tablespoon garam masala
1/2 tablespoon cumin
1/2 tablespoon cayenne
1/2 tablespoon turmeric
1/2 tablespoon paprika
1 sprig of chopped rosemary
handful of chopped cilantro
2 tablespoons olive oil
1/2 tablespoon salt
juice of 1/2 lime
Sliced onions and tomatoes on the thick side, coated lightly with olive oil and salt and black pepper before grilling.
Marinated beef for one hour, overnight would be better. Brushed and oiled the grill and cooked for about 5 minutes on high, taking the veggies off when they looked ready.
It all kind of looked like fajitas, so I sliced the meat thin, cut up veg a little bit and served on crusty-warm flour tortillas. Wonderful!
