Marinated for 30 minutes in:
1/2 cup fish sauce
1/2 cup rice vinegar
1/4 cup soy sauce
1/4 cup sugar
Juice from 1/2 lime
1 small shallot (or half onion), finely minced
Heat: I had hot sauce and red pepper flakes on hand, added to taste
Thai peppers or chili paste next time.
Fried for 5 minutes each side, then baked at 350 for an hour. Firm, tangy, and wild tasting :)
