I recently discovered the snacky aisle at the local India Mart, and learned about Sev. Near as I can tell, sev is extruded flour snacks, similar to chow mein noodles in America, only these use a potato, peanut or gram (chickpea) flour or mix of the three, then generously spiced.
Haldiram's Long Sev (salt pepper chili) was pretty boring and peanut-ey (not in a good way). Haldiram's Aloo Bhujia (salt coriander cumin mango chili nutmeg mace mint citric acid) nice texture and flavor, afterkick of mint. Mo'Pleez Aloo Bhujia was mild to bland/pepperey. Mo'Pleez Nimbu Masala was different, a bit more ginger and citric acid, undertones of Salt and Vinegar stateside potato chips.
Haldiram's Punjabi Tadka was high on the list for texture and flavor. It was a thicker noodle and similar in flavor to the Haldiram's Aloo Bhujia without the mint, and more black pepper. Those two are my winners for today! I'll do a Part 2 when I get some more brand diversity.
